Timor Leste Full Washed is our starting-point filter — the coffee we hand to friends who’ve only ever had espresso and want to understand what a pour-over is doing differently.
It’s a full-washed lot from Ermera Farm, sitting between 1,200 and 1,600 meters above sea level in the highlands of Timor Leste. Fully organic. Catimor and HDT varieties, both known for their nutty body and low, comfortable acidity — forgiving in the cup even if your grind or ratio isn’t perfect.
Roasted to a filter profile — medium roast, developed for clarity over caramelization. What you get in the cup: a soft cocoa-powder body, roasted-nut sweetness, and an easy finish that doesn’t punish you for over-extracting.
